Let’s be honest, it’s not summer without ice cream. And because peaches are a summer fruit the two go together hand in hand. Behold my Peach Nice Cream recipe. That’s right, ‘Nice Cream’ is our plant-based vegan version of this delicious treat.
What’s best about this one is that it’s a fraction of the calories with almost no fat. It’s also high in potassium so you can enjoy the heck out of it! This recipe is best made inside of a food processor, but you could also make this in a Vita-Mix. This comes together pretty quickly and stores forever in the freezer. But let’s be honest, it’s never going to last that long.
This is absolutely delicious on it’s own, but feel free to pair this with my Peach Upside Down Cake or my Peach Crumble, or any of my other Desserts. If not already, cut up the frozen fruit into small pieces.
Place everything into a food processor and pulse. You’ll find that it starts to break down the fruit into little balls, keep going. It’s going to take a bit as you scrape down the sides and push everything into the middle and continue to pulse. It takes a bit, but it’s entirely worth it!

Once creamy add the vanilla and pulse again until mixed in. You can serve it right away and it’ll have a consistency like soft-serve, but you can put it into a glass container and stick it in the freezer for a few hours to harden it up closer to a hard ice cream.
