There are so many salad recipes out there, but if you want one that’s perfect for the summer season than look no further than this Grilled Peach Salad. This is paired with my Creamy Peach Dressing so pop over to that recipe too, but feel free to use any dressing you like!

Peaches are such a beautiful fruit to pair with more savoury meals like salads. If you’ve got a BBQ it’s easy to grill the peaches there, but you could easily do it in an Air-Fryer or even in your oven or in a frying pan. Don’t let anything limit you from doing this! And if you don’t have peaches you could easily swap this out with another seasonal fruit like nectarines, apricots, plums, you name it! But peaches are awesome. Try them with this if you can.

If you’re nut-free you can omit the maple pecans, but they add a delicious and awesome texture here. Swap them out with pumpkin seeds and just cook them for less time.

Maple Spiced Pecans

  1. Preheat your oven to 350 F. Prep a pan with a silicon sheet or parchment. Turn your BBQ on to heat up. (if you don’t have one don’t fret, we’ll sort that out below). 

  2. Put your pecans in a small bowl and drizzle on the maple syrup, cinnamon, and chilli powder on. Mix around. Spread them out onto your baking sheet. Bake for 8 minutes, then take out and stir them around, cook another 5 minutes. Take them out and let them cool.

Salad

  1. Once your BBQ is up to temperate - around 400 F, give it a quick clean to get any of your old nasty bits off, and then place your peaces on cut side down. Close the lid and let them cook at least 5 minutes or so. (if you don’t own a BBQ then just put your peaces on a separate baking sheet with silicon or parchment and bake along with the pecans - but let them go for 30 minutes. 

  2. While your peaches are on the BBQ you can assemble the rest of your salad by placing your lettuce, carrot, pepper, and beets into a bowl. 

  3. Make the Creamy Peach Dressing (see link about in the description) and let sit till ready to use. 

  4. Flip your peaches once they’ve softened a bit and have sweet grill marks. Once flipped let them grill another 5 minutes and then take them off and slice into smaller chunks.

Assemble

  1. Just before eating pour your dressing onto the salad and mix well. Top with your grilled peaches and maple spiced pecans. Serve and enjoy!
