When it’s hot outside but you’re craving a decadent dessert this is the perfect thing! Dessert Pizza – no oven required! This recipe is as fun to eat as it is to make!

I’ve got a list of ingredients below that I used, but this recipe is so easily customized to whatever you want and whatever you’ve got on hand. For the cereal base I’m using rice crispies but you could swap that out with pretty much any dry cereal. I just recommend those that are on the smaller side so they form together nicely. I’m using mixed-berries for the fruit, but you can use any frozen fruit that you’ve got on hand and it’ll work out just fine. If you don’t have a high-speed blender you could also swap this out with any non-dairy ice cream – about two cups worth. I’ve got the toppings I’ve used below but you could use whatever you want: chocolate chips, nuts, dried fruit – make it your own!

This recipe is wonderfully decadent but it doesn’t rack up the calories. It’s a really healthy way to top off a summer meal for you and your loved ones. I strongly recommend making this with your kids. They’re going to have as much fun making it as you are! And if you like this don’t sleep on my other Dessert Recipes!

  1. The Crust

    Line a pizza pan or baking sheet with parchment paper. If you’ve got a silicon sheet even better!

  2. First you’re going to make the crust. Mix together the maple syrup, coconut oil, and cocoa powder together in a small bowl. In a larger bowl pour the cereal and then mix the chocolate mixture into it until it’s well combined.

  3. Spoon the crust mixture onto the prepared pizza pan and spread it out

    into roughly a 10-inch circle. Honestly - make it whatever shape you want - but a circle makes it look like a pizza, obviously. You can just use your hands or add a piece of parchment paper on top and press down to compact the mixture and form the shape. Place the pan in the freezer for 5 to 10 minutes until firm.

  4. While that’s happening we’re going to make our frozen fruit spread. Add your frozen berries - or whatever fruit you’re using - into your high speed blender and blend until it’s turned into a soft-serve type mixture. Once it’s ready pull the crust out from the freezer and spread this on top of it and make sure it’s even.  Return the pan to the freezer for another 5 to 10 minutes while you get all your toppings ready.

Toppings

  1. In a small bowl mix together the chocolate chips and coconut oil. Microwave for 30-60 sections until the chocolate is mostly melted, then stir until it’s nice and smooth. Get your other toppings ready.

  2. Remove your crust from the freezer and start to spread out the cherries, cocoa nibs, and whatever use you’re using on top. Save the coconut for after! Now drizzle the chocolate sauce overtop of everything and then sprinkle the coconut on top of it. Return to the freezer for a few more minutes, or until you’re ready to eat it. It’ll sit just fine for a long time.

  3. Don’t take it out too early, as once it comes down to room temperate it falls apart pretty quickly. Slice into pizza-esque slices and smash them into your face!
