A lot of folks assume that people who go plant-based just eat a lot of salads, but I’ve got a sweet tooth to rival anyone else’s. When it comes to the combination of chocolate and peanut butter all bets are off. Hence the need for these crazy decadent Chocolate Peanut Butter Oat Bars. 

Now you’ll probably notice that this isn’t exactly the healthiest recipe on my site. If you’re looking for something that’s entirely whole food plant-based consider my Almond Fudge Brownie Pie or my Chocolate Chip Cookie Pie. Because of the coconut oil it doesn’t qualify for being who food plant-based. I only use oil when absolutely necessary in a recipe, but here you’ll find that it’s required for everything to set properly. It’s worth the calories, trust me. Just go for a big long walk and earn it! 

This might seem complicated because of all of the steps, but they’re all simple enough. Even a kid could put this recipe together and I suggest you include them in it, if you’ve got a kid in your house that is! 

You don’t need a special occasion to make these, you just need a little prep since they take some time to set in the freezer. They’re great for entertaining as part of a spread, or just make a batch and treat yourself every day. Whatever you want! Make these Chocolate Peanut Butter Oat Bars and smash them into your face!

Oat Crumble

  1. Line a 9x5” loaf pan with parchment, but cut to size so that some hangs over.

  2. In a food processor add the dates and oil and process for about 30 seconds. Add the oats, salt, and water and process for another 8-10 seconds. Just enough so that it sticks together when pressed.

  3. Scatter 1 1/3 cup of the mixture over the bottom of the pan. Spread the mixture out evenly and press it down firmly to form a level crust. Set the rest of the mixture aside for the topping!

Peanut Butter Drizzle

  1. In a microwave mix together everything and heat for 15-30 seconds at a time. Be careful to now overdo it or it will burn! Whisk it together and set aside.

Chocolate Peanut Butter Sauce

  1. In a pot add the oil and maple syrup and heat over low until the oil is melted. Add the cocoa and whisk together until smooth. Add the peanut butter and continue to whisk until combined, add a pinch of salt. You should have a delicious gooey mess on your hands. Trust - it's a good thing!

Putting it all together

  1. Pour the chocolate peanut butter sauce evenly over the crust layer. Tilt the pan so that it spreads naturally and evenly. Use a small spatula if needed to make sure it gets everywhere.

  2. Now pour the peanut butter drizzle on top in a bit of a zig-zag pattern - it doesn’t have to cover the chocolate sauce completely.

  3. Sprinkle the rest of the remaining oat crumble over top of the bars. Gently press down so it sinks into the mixture.

  4. Freeze on a level surface for 1-2 hours or longer, until the squares firm up.

    Remove, cut to the sizes you want - I recommend 16, but you do you. Smash them into your face!
