Peaches & Cream Pudding

Late summer is for peaches, and when we go to the market we buy a LOT. So I need to figure out what to do with them all and you probably do as well. Look below for a lot of ideas on that, but first and foremost let’s make something that’s delicious enough for dessert, but healthy enough for dessert: Peaches and Cream Pudding!

Because it’s so low in calories there’s no reason that you couldn’t have this with breakfast by adding some more fruit and granola or cereal on top of it. And because it’s made with whole fruit the healthy carbs here are packed with fibre and keep you full longer.

Description

Looking for a treat that’s healthy enough for breakfast but delicious enough for dessert? This Peaches & Cream Pudding will tick off all the boxes!

Ingredients
  • 2 cup Peaches (cut into chunks)
  • 1 cup Unsweetened Dairy-Free Milk
  • 1 can Full Fat Coconut Milk
  • 1/4 cup Corn Starch
  • 1/4 cup Maple Syrup
  • 1 tsp Vanilla Extract
  • 1 dash Sea Salt
Instructions
  1. In a food processor pulse your peaches until creamy. Add in both milks and the corn starch and mix again until well combined.

  2. Pour mixture into a medium saucepan and bring to a simmer, whisking the entire time. Once it’s up to a simmer keep stirring until it thickens - about five minutes. Let it get to pudding-esque texture. You know what pudding is like, right? It’ll thicken a bit as it cools too, so don’t worry too much. 

  3. Turn off your heat and mix in the remaining ingredients and pour into a large nonmetal container. Leave on the counter at least 15 minutes to cool then transfer to the fridge several hours or overnight.

  4. This is great on its own as a dessert, or part of a breakfast parfait. No matter what make sure you make this and smash it into your face.
