If you’re in the market for a lovely light luscious delectable cake you’re in luck! This Peach Upside Down Cake cake is as healthy as it is delicious and it’s even gluten-free should you desire. Crazy, right? It’s beautiful and delicious and you’re going to want to make it on the regular.
This cake is healthy enough you could even have it for breakfast. Seriously. Who am I to judge? It’s got a healthy amount of carbs and will keep you full. Maybe just pair it with something like a Green Smoothie to get more goodness into you.

This Peach Upside Down Cake is the lovely light luscious dessert you’ve been looking for. Easily made gluten-free. Healthy and beautiful!
Preheat your oven to 350 F. Get a 9 inch silicon pan ready. If you don’t have a silicon use parchment.
In one large bowl whisk together the flour, sugar, baking soda, cinnamon and salt. In another bowl combine the apple sauce, water, vanilla and apple cider vinegar. Pour the wet ingredients into the dry and mix together until just combined. Do not over mix it - seriously! This stuff's going to be thick, but the peaches are going to get moist as they bake and it’ll release into the dish - science, baby!
Arrange some peaches into the bottom of the pan into whatever pattern you’d like - make it fancy! Gently fold in the rest of the peaches with the batter and then spoon the batter into the pan. Be careful not to mess up your pattern while you do this! Just scoop it and smooth it all around. Pat that stuff down into the pan, get your hands damp and use them if you’d like.
Bake for 40-45 minutes depending on your oven - make sure the centre is set and it’s starting to brown a bit on top. Once it’s cool gentle flip over to reveal that awesome pattern you designed. Cut into slices and SMASH IT INTO YOUR FACE!
