The best thing about fall coming is I know that I’m going to be making a lot more soup. My issue with most soups is that they hit the spot in the moment, but they don’t fill me up. This Tomato Lentil Bisque solves that problem. It’s high in both protein and fibre and so it fills you up beautifully and has killer taste in the process.
For this soup you’re going to want a combination of fresh tomatoes and canned or diced. If you don’t have access to either you could probably just double up on the other one. I personally haven’t tried it, but I can’t see it being a major issue. It’ll likely just impact how thick or thin the soup is - so adjust accordingly.
For those who are skeptical of the lentils, when they could down they pretty much become mush and when using the blender at the end the whole thing becomes this delightfully thick mixture that pops with pure flavour.

Soup often leaves you wanting more, but this fibre and protein packed Tomato Lentil Bisque is comfort food to the extreme and will keep you going!
Heat up a large pot. Saute the onions, garlic, and carrots until till softened. This should only take about 5-10 minutes max.
Once that’s done add in everything else except the basil and bring to a boil. Simmer 15-20 minutes until the lentils are softened.
Add in the fresh basil. Let cool and then blend everything together in either an immersion blender or high speed blender.
Serve. Enjoy!
