Hearty Lentil Soup

I love a good bowl of hearty soup and this one is that and then some. This Hearty Lentil Soup is everything you want in a nourishing bowl of soup. You can wait this with something like my Plant-Based Grilled Cheese, but it’s equally as good with just a hunk of sourdough. Or have it on it’s own with a muffin for dessert!

You’re going to love how this soup fills you up. It’s packed with protein and fibre with a wallop of iron as well. It’s great for a cold day, or as a light meal when you just want to snuggle up on the couch and relax.

This will become one of your go-to weeknight meals. It’s a one-pot beauty in that it takes very little time to get going and it essentially cooks in the background while you’re making a comfort food dessert like my Fruit Grunt.

This stores beautifully in the fridge - and it’s one of those dishes that tastes even better the next day. It makes a big batch, so this is a great soup to make on a Sunday and have lunches throughout the week. Whatever you do with it this Hearty Lentil Soup is going to warm its way into your heart. Smash it into your face!

Description

This Hearty Lentil Soup is a perfect plant-based meal. It’s packed with protein, fibre, and flavour!

Ingredients
  • 2 Onions (diced)
  • 4 Stalks of Celery (diced)
  • 4 Carrots (sliced)
  • 4 clove Garlic (minced)
  • 1 can Tomato Paste
  • 3 cup Green or Brown Lentils (dry)
  • 28 oz Can of Diced Tomatoes
  • 1/2 tsp Paprika (smoked)
  • 2 Bay Leaves
  • 1 1/2 tsp Dried Thyme
  • 1/2 tsp Cinnamon
  • 8 cup Low Sodium Vegetable Broth
  • Salt and Pepper (to taste)
  • 1/3 cup Fresh Parsley (chopped)
Instructions
  1. In a large pot dry-sweat the onions, carrots and celery with a pinch of salt until they start to soften up a bit. About 8-10 minutes.

  2. Add the garlic and continue to sweat for another minute. Add in the tomato paste and mix it around. Cook another 2 minutes.

  3. Add in everything else except the parsley and stir it up while also bringing it to a boil. Once it’s going bring it down to a simmer and let it cook for 1hr until everything is cooked through and the lentils are soft.

  4. Season with salt and pepper to taste, serve and top with the parsley. Enjoy!
