Fudgy Black Bean Brownie

Eating healthy, especially whole food plant-based or vegan doesn’t mean you can’t have decadent desserts. These Fudgy Black Bean Brownies are moist and rich and all the things you want in a brownie. I particularly like putting some Chia Jam on top - or you could add some plant-based ice cream - consider my Peach Nice Cream. That said, they’re delicious on their own! 

What’s really lovely about these brownie is that they’re naturally gluten-free because they have zero flour in them at all. If you wanted to make these nut-free you could swap out the almond butter for tahini or anything similar that you’re not allergic to. 

These brownie pack a nice little punch of protein and fibre, so a little goes a long way towards fulfilling you as a dessert. They make sixteen if you’re being mindful, but eat as much as you please! You could also crumble this up and use it in parfaits or trifles if you've got some left over!

Ingredients
  • 2 cup Black Beans (cooked)
  • 1 1/4 cup Dates (softened)
  • 2 tbsp Almond Butter (or nut butter of choice)
  • 1 tsp Vanilla Extract
  • 1/2 cup Cocoa Powder
  • 1 tbsp Chia Seeds
  • 1/3 cup Walnuts (chopped)
  • 1/3 cup Non-Dairy Chocolate Chips
Instructions
  1. Preheat your oven to 200 F. 

    Combine your beans, dates, almond butter and vanilla in a food processor, blend until beautifully creamy! 

  2. Add cocoa and chia and blend again until nice and smooth.

  3. Scrape into a silicon or lightly greased 8x8 inch pan. Bake for 90 minutes. Yeah, I know it takes a while, just start this earlier in the day! 

    Cool completely before cutting into your shape of choice!
