You’re craving delicious decadent cookies, but you’re also trying to be good - so here’s my pretty-damn-healthy Chocolate Raisin Oatmeal Cookies! These are gluten-free, plant-based vegan and also whole food plant-based. But forget all about that because they’re also delicious and that’s all that matters deep down!

Seriously though - these delicious cookies are only 85 calories each so you can smash a few of them into your face guilt free. If you’re looking for something to pair this with consider serving them with a non-dairy ice cream of your choice. If you’ve got peaches on hand consider whipping together my Peaches Nice Cream to go along with it. 

These cookies are totally customizable. If you want to make them a bit healthier feel free to omit the chocolate chips. You can add nuts or seeds and swap out any dried fruit that you prefer or have on hand. If you don’t have almond butter any nut or seed butter would work. Tahini is another option but it can affect the flavour depending on what brand you use.

Ingredients
  • 2 tbsp Ground Flax
  • 5 tbsp Water
  • 1/2 cup Almond Butter (or nut butter of choice)
  • 2 tbsp Maple Syrup
  • 1 tsp Vanilla Extract
  • 1/4 tsp Sea Salt
  • 1 cup Rolled Oats
  • 1/3 cup Raisins
  • 1/3 cup Non-Dairy Chocolate Chips
Instructions
  1. Heat the oven to 350°F. Line a sheet pan with parchment paper.

    In a medium bowl, stir together the flaxseed meal and water. Let stand for about 10 minutes, or until slightly thickened. Whisk in the peanut butter, maple syrup, vanilla, and salt.

  2. Add the oats and cranberries and stir to combine. Scoop the dough into heaping tablespoon-size mounds and place on the prepared pan.

    Bake for 10 to 12 minutes, until set.
